Vegan Meatballs & Tomato Sauce

At Saledo, we love creating recipes that inspire your meals. We combined vegetables with Green Banana Flour to create healthy and filling vegan meatballs. Paired with our tomato sauce, it became a practical and flavorful alternative.

The feature of this recipe is that it's open to your creativity. You can add whatever you have in your fridge: mushrooms, zucchini, carrots, or peppers... Green Banana Flour blends them all and you can freely add your own touches according to your taste.

Ingredients (for the vegan meatballs)

  • 100 g (5–6) button mushrooms
  • 100 g (½) zucchini
  • 100 g (½) onion
  • 50 g (½) bell pepper
  • 50 ml (5 tablespoons) olive oil
  • 2 g (½ teaspoon) salt
  • 1 g (¼ teaspoon) black pepper
  • 2 g (½ teaspoon) cumin
  • 2 g (½ teaspoon) chili powder
  • 70 g (7 tablespoons) Saledo Green Banana Flour

Ingredients (for the tomato sauce)

  • 500–550 g (4) fresh tomatoes
  • 100 g (6–7 tablespoons) chopped dried onion
  • 10 g (1 tablespoon) Saledo Green Banana Flour
  • 200 ml (1 cup) water
  • 50 g (3.5 tablespoons) tomato paste
  • 20 ml (1.5 tablespoons) apple cider vinegar
  • 2.5 g (½ teaspoon) salt
  • 20 g (1.5 tablespoons) granulated sugar
  • 20 ml (1.5 tablespoons) olive oil
  • 1 g (¼ teaspoon) ground black pepper
  • 10 g (2 cloves) garlic
  • 1 g (3–4 leaves) basil

Preparation (Meatballs):

1.      Heat the olive oil in a pan. Add the onion, mushrooms, bell peppers, and zucchini in that order and sauté.

2.     Blend the vegetables until slightly chunky and set aside to cool.

3.     Add the spices and green banana flour and mix.

4.     Let the mixture rest in the refrigerator for 15 minutes.

5.     Fry the meatballs in olive oil or sunflower oil.

Preparation (Tomato Sauce):

1.      Heat the olive oil in a saucepan and sauté the dry onions until translucent.

2.     Add the garlic and sauté for 1 more minute.

3.     Add the tomato paste and fry, then add the green banana flour and water.

4.     Add salt, black pepper, and vinegar and mix.

5.     When it starts to boil, add the peeled and diced tomatoes and cook.

6.     When the sauce has reduced by 1/3, remove from heat, add the basil leaves, and let rest for 5 minutes.

7.     Blend it gently, making sure it remains in pieces.
