The classic Italian Tiramisu gets a completely gluten-free and much lighter twist with a touch of Saledo! We’ve prepared the homemade ladyfingers in their healthiest form using Saledo Gluten-Free Banana Bread Mix. Combined with the unique harmony of sugar-free mascarpone cream and espresso, this recipe will become a must-have for your special occasions with its elegant presentation. A great choice for those who want to eat healthy without compromising on the joy of dessert!
Ingredients:
- 10 g (1 tablespoon) cocoa powder
- 1 cup espresso
Ladyfingers:
- 4 eggs
- 60 g (4 tablespoons) Saledo Gluten-Free Banana Bread Mix
Mascarpone Cream or Labneh:
- 200 g (5 tablespoons) mascarpone / labneh
- 200 g (1 pack) cream
- 45 g (3 tablespoons) apple juice concentrate
Instructions:
- First, separate the egg whites and yolks for the ladyfingers. Whip the egg whites in a stand mixer until stiff peaks form. Add the egg yolks and Saledo Gluten-Free Banana Bread Mix, gently fold together, and transfer to a piping bag.
- Pipe the mixture into ladyfinger-shaped strips onto a greased baking tray and bake at 175°C for about 5–6 minutes.
- Set the baked ladyfingers aside and let them cool.
- Whip the cream in a stand mixer until thick. Add the mascarpone cheese and apple juice concentrate, whip together once more, and let it rest in the refrigerator for about 30 minutes.
- Once the cream has rested, pipe a layer into your desired serving dish, add espresso-soaked ladyfingers on top, then another layer of cream. Repeat to create layers as desired.
- Finally, dust generously with cocoa powder and refrigerate for about 40 minutes before serving.
