Ingredients:
20 g (2 tablespoons) Saledo Green Banana Flour
3 eggs
50 g (4 tablespoons) olive oil
80 g (4 tablespoons) strained yogurt
60 g (3 tablespoons) tahini
250 g (1 bunch) spinach
1 medium onion
100 g (1 teacup, diced) halloumi
5 g (1 teaspoon) sesame seeds
5 g (1 teaspoon) black cumin seeds
Instructions:
Sauté the chopped onion and spinach in olive oil. Set aside to cool.
In a bowl, whisk together the eggs, strained yogurt, tahini, and Saledo Green Banana Flour until smooth.
Add the diced halloumi and the sautéed spinach to the mixture and stir well.
Pour the mixture into a baking tray, sprinkle with sesame and black cumin seeds, and bake at 180°C (356°F) until the top is golden brown. Baking time may vary depending on the thickness of the mixture, approximately 20–25 minutes.
Note: You can enhance the flavor by adding your favorite spices to the mixture—red pepper flakes work particularly well.
