The traditional Tres Leches flavor is taken to a whole new level with the unique taste of pistachios and the Saledo touch! This soft cake, prepared with Saledo Gluten-Free Banana Bread Mix, offers a light dessert feast by combining a special milk sauce with natural caramel made from apple juice concentrate. It is a delicious recipe that is enjoyable to prepare and will leave a lasting mark on the palate for those who want to eat gluten-free without giving up classic flavors.

Ingredients:

  • 60 g (4 tablespoons) Saledo Gluten-Free Banana Bread Mix
  • 60 g (6 tablespoons) ground pistachios
  • 4 eggs
  • 100 ml (1/2 cup) milk
  • 35 g (1 heaping tablespoon) butter
  • 4–5 g (1 teaspoon) vinegar

Sauce:

  • 300 ml milk (about 2.5 cups)
  • 30 g (2 tablespoons) apple juice concentrate

Cream:

  • 200 g (1 pack) cream

Caramel:

  • 3 tablespoons cream
  • 45 g (3 tablespoons) apple juice concentrate
  • 10–12 g (1 teaspoon) butter

Instructions:

  1. To prepare the cake, whisk the eggs, milk, and melted (cooled) butter in a bowl until smooth.
  2. Add vinegar, ground pistachios, and Saledo Gluten-Free Banana Bread Mix, then mix again.
  3. Bake in a preheated 170°C oven for about 20–25 minutes.
  4. Once out of the oven, poke holes in the cake using a toothpick or knife tip and let it cool slightly.
  5. While the cake is cooling, mix apple juice concentrate with room temperature milk. Pour it over the slightly cooled cake in two batches to allow it to absorb and become moist.
  6. Set aside 3 tablespoons from the 200 ml cream, and whip the remaining cream using a stand mixer or whisk until fluffy.
  7. For the caramel, add apple juice concentrate to a non-stick saucepan. Once it starts to boil and turns lightly brown, remove from heat and add butter. After the butter melts, add the reserved 3 tablespoons of cream and mix well.
  8. Once the cake has cooled and rested in the refrigerator for at least 2 hours, spread the whipped cream on top, then drizzle with the prepared caramel and serve.
