Gluten Free Tomato Gazpacho Soup

Ingredients:
- 100 g yellow cherry tomatoes
- 100 g capia pepper (seeded)
- 15 g (2 tablespoons) apple cider vinegar
- 15 g (1 tablespoon) Saledo Green Banana Flour
Preparation:
- Coarsely chop the tomatoes, cucumber, capia pepper, red onion, and garlic.
- Place all ingredients in a blender. Add the basil, apple cider vinegar, Saledo Green Banana Flour, salt, and pepper.
- Optionally, add water, up to 1 teaspoon.
- Strain the mixture through a fine strainer and chill, or add ice before serving.
Serving Suggestion:
After serving, drizzle a little olive oil over the top for extra flavor.
