Gluten Free Tomato Gazpacho Soup

Ingredients:

  • 500 g tomatoes
  • 100 g yellow cherry tomatoes
  • 150 g cucumber (peeled)
  • 100 g capia pepper (seeded)
  • 45 g red onion
  • 5 g garlic (1 clove)
  • 5 g basil
  • 15 g (2 tablespoons) apple cider vinegar
  • 15 g (1 tablespoon) Saledo Green Banana Flour
  • 2 g salt
  • 1 g black pepper

Preparation:

  • Coarsely chop the tomatoes, cucumber, capia pepper, red onion, and garlic.
  • Place all ingredients in a blender. Add the basil, apple cider vinegar, Saledo Green Banana Flour, salt, and pepper.
  • Blend until smooth.
  • Optionally, add water, up to 1 teaspoon.
  • Strain the mixture through a fine strainer and chill, or add ice before serving.

Serving Suggestion:

After serving, drizzle a little olive oil over the top for extra flavor.
