Gluten-Free Mom's Pastries

Soft as if made by mom's hands, fragrant, but this time gluten-free! Prepared with gluten-free flour mix and Saledo Green Banana Flour, these pastries are just as delicious as classic mom's pastries. Perfect for tea time, breakfast, or any time of day, this recipe offers a light yet satisfying option. Enjoy them plain, or fill them with cheese or olives for variety.

Ingredients:

·       100 g (1 + 1/3 teacup) Saledo Green Banana Flour

·       150 g (1 + 1/4 cup) gluten-free buckwheat flour

·       3 eggs

·       50 g (3.5 tablespoons) strained yogurt

·       50 g (3.5–4 tablespoons) olive oil

·       50 g (3.5 tablespoons) melted butter

·       100 g (2/3 cup) white cheese

·       4–5 sprigs of parsley, dill, and fresh mint

·       4 tablespoons dried mint

·       1 teaspoon apple cider vinegar

·       5 g (1 teaspoon) baking soda

·       1 teaspoon salt

·       1 teaspoon black pepper

·       1 tablespoon sesame seeds

·       1 tablespoon black seed

Preparation:

1.      Mix the green banana flour, buckwheat flour, and dried mint in a bowl.

2.     In a separate bowl, whisk together 2 eggs, strained yogurt, melted butter, and olive oil.

3.     Combine the dry and wet mixtures. Add baking soda and apple cider vinegar, then knead the dough.

4.     Let the dough rest in the refrigerator for 30 minutes.

5.     Meanwhile, for the filling, mash the white cheese, add parsley, dill, fresh mint, salt, and black pepper.

6.     Divide the rested dough into 6 equal pieces. Place the filling inside, close, and roll into balls.

7.     Brush with the reserved egg yolk and sprinkle with sesame seeds and black seed.

8.     Bake in a preheated 180°C oven for 35–40 minutes, until golden brown.

Tips:

·       Baking time may vary depending on the type of oven, so bake carefully.

·       ⁠For a crispier crust, you can drizzle a few drops of olive oil over the buns before baking.
