We all remember the smell of gözleme cooking at home when we were kids; the sizzling dough in the pan, the aroma of melting cheese... We brought those memories to the Saledo kitchen.
We made this gluten-free gözleme with green banana flour and psyllium husk, and the cheese filling makes it both light and filling. Perfect for adding a nostalgic flavor to your tea time or quick meal.
Ingredients:
· 100 g (1 + 1/3 teacup – 100 ml) or 10 tablespoons Saledo Green Banana Flour
· 10 g (2 heaping teaspoons) psyllium husk
· 2 g (½ teaspoon) salt
· 15 ml (2 tablespoons) olive oil
· 125 ml (1 cup) water (or ½ cup + 2 tablespoons)
Filling:
· 50 g (3–4 tablespoons, grated) white cheese
· 50 g (6–7 tablespoons, grated) cheddar cheese
Preparation:
1. Add the green banana flour, psyllium husk, and salt to a mixing bowl and stir.
2. Add warm water and olive oil on top. Using a spatula, mash it into a dough. (If necessary, you can knead it with your hands; the dough will come together easily.)
3. Wrap the dough in stretch film and let it rest in the refrigerator for 5–10 minutes.
4. Roll out the rested dough with a rolling pin. Cut out round shapes from the rolled dough (you can use a bowl or a round mold).
5. Place some filling in the center of each round piece of dough and fold it into a D shape.
6. Cook the gözleme on a nonstick pan, flipping them over.
7. To prevent sticking while rolling out the dough, put flour to the countertop and rolling pin with cornstarch. This method also minimizes cracking and breaking.
8. If you have trouble gathering the dough, you can add 1 tablespoon of water.
