We always bought grissini in ready-made packages, until we decided to try making our own gluten-free version at home. On our first try, the fresh aroma of sesame and black seed permeating the kitchen was enough; we didn't even wait for it to cool before we took it from the tray and ate it whole. The best part about this recipe is that it fits any occasion. With morning tea, during a coffee break at noon, while studying, or at the dinner table... Its lightness means you won't feel guilty, and it keeps you full. And if you have cheese, olives, or your favorite dip on the side, the enjoyment doubles.
Now, when we think of grissini, it's not the ones from the supermarket shelves that come to mind, but this homemade treat fresh from the oven. A little dough, some sesame seeds and black seed... The result? A simple but satisfying snack to accompany any moment of the day.
Ingredients
Preparation:
1. Place the Saledo Green Banana Flour, chickpea flour, and salt in a mixing bowl and stir.
2. Add room temperature water and olive oil to the dry mixture and knead until you get a non-sticky consistency.
3. Let your dough rest in the fridge for 15–20 minutes.
4. Preheat your oven to 150 degrees Celsius.
5. Take pieces of dough slightly smaller than a walnut from the rested dough and roll them out into cylinders on the countertop.
6. Dip each grissini piece first in water, then in the black seed–sesame seed mixture.
7. Bake in the preheated oven for about 1 hour.
8. You can dip them in other mixtures of your choice (e.g., sunflower seeds, black seed, oats).
