Peel and grate the carrots. Add the walnuts and date purée, then blend with a blender for about 1 minute until everything is well combined. Transfer the mixture to a bowl.Next, add the date syrup, cinnamon, shredded coconut, and Saledo green banana flour, adjusting the consistency as needed. Let the mixture rest in the refrigerator for about 15 minutes.Form walnut-sized balls from the rested mixture, roll them in shredded coconut, and serve.
