Avocado and Spinach Pesto Sauce

Sometimes when ingredients in the fridge come together, they create a surprising harmony. That's exactly what happened when we combined avocado, spinach, and green banana flour. The creamy softness of the avocado, the freshness of the spinach, and the fibrous texture of the banana flour combined to create a sauce that was much different from the pesto we know, lighter and more nutritious.

The first time we tried it, we poured it over pasta and didn't even notice the plate was empty. Then we added it to salads, spread it on bread for breakfast... No matter what meal it was, it added both health and color to the table.

We've prepared a green, light, and healthy pesto recipe for you that goes well with every meal, from pasta to breakfast.

Ingredients

  • 15 g (1.5 tablespoons) Saledo Green Banana Flour
  • 50 g (about ¼ bunch) spinach
  • 10 g (15–20 leaves) basil
  • 8 g (5–6 sprigs) mint
  • ½ lemon (use the zest and juice)
  • 6 g (1 large clove) garlic
  • 100 ml (½ cup) olive oil
  • ½ avocado
  • 2 g (½ teaspoon) salt
  • 30 g (2.5 tablespoons) pumpkin seeds

Preparation:

1.      Place all ingredients in a bowl.

2.     Blend until smooth.

3.     Serve over pasta, salad, or breakfast toast, as desired.
