Gluten Free New Year’s Cookies

Ingredients:
- 1 cup green banana flour
- 1.5 teaspoons baking powder (or baking soda + a few drops of lemon)
- 1 cup vegan milk
- ½ cup red apple puree
- 2 tablespoons apple juice concentrate (or preferred liquid sweetener)
- 1 tablespoon peanut butter
- 1 teaspoon vanilla
Instructions:
- Preheat the oven to 180°C (170°C for fan ovens) and line a baking tray with parchment paper.
- In a mixing bowl, combine the green banana flour and baking powder.
- Add the liquid ingredients: vegan milk, apple puree, apple juice concentrate, peanut butter, and vanilla.
- Mix all ingredients well until you get a thick dough. If the dough seems too dry, you can add 1-2 tablespoons of vegan milk.
- Take walnut-sized pieces of dough, roll them into balls, and place them on the baking tray.
- Bake the cookies in the preheated oven for 12-15 minutes. Remove them from the oven when the tops crack lightly and the bottoms change color.
To add a festive touch, you can decorate the cookies with a light dusting of cinnamon or shredded coconut.
