Gluten Free Breakfast Muffin

Ingredients:
- 3 eggs
- 2.5 tablespoons green banana flour
- 60 g white cheese (diced)
- 2 tablespoons pumpkin and sunflower seeds
- 5 olives (finely chopped)
- 2 tablespoons olive oil
- 1 teaspoon baking powder
- A pinch of salt
- Black cumin seeds for topping
Instructions:
- Preheat the oven to 180°C (top and bottom heat).
- Crack the eggs into a bowl and whisk well.
- Add olive oil and mix.
- Add green banana flour, baking powder, and salt, then mix until smooth.
- Fold in the white cheese, olives, pumpkin, and sunflower seeds using a spatula.
- Lightly grease muffin molds and evenly distribute the batter.
- Sprinkle black cumin seeds on top.
- Bake in the preheated oven for 20-25 minutes until golden brown.
- Let them cool slightly before removing from the molds and serving.
