Gluten Free Breakfast Muffin

Ingredients:

  • 3 eggs
  • 2.5 tablespoons green banana flour
  • 60 g white cheese (diced)
  • 2 tablespoons pumpkin and sunflower seeds
  • 5 olives (finely chopped)
  • 2 tablespoons olive oil
  • 1 teaspoon baking powder
  • A pinch of salt
  • Black cumin seeds for topping

Instructions:

  1. Preheat the oven to 180°C (top and bottom heat).
  2. Crack the eggs into a bowl and whisk well.
  3. Add olive oil and mix.
  4. Add green banana flour, baking powder, and salt, then mix until smooth.
  5. Fold in the white cheese, olives, pumpkin, and sunflower seeds using a spatula.
  6. Lightly grease muffin molds and evenly distribute the batter.
  7. Sprinkle black cumin seeds on top.
  8. Bake in the preheated oven for 20-25 minutes until golden brown.
  9. Let them cool slightly before removing from the molds and serving.
