Gluten-Free Cocoa Cookies

Ingredients:

  • 20 g green banana flour
  • 10 g shredded coconut
  • 5 g cocoa powder
  • 5 g cinnamon
  • 40 g mulberry flour
  • 40 g butter (melted, added in liquid form)
  • 3 egg yolks
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • Chocolate chips for topping

Instructions:

  1. In a mixing bowl, whisk together the egg yolks and mulberry flour.
  2. Add the melted butter and vanilla extract, and continue mixing.
  3. In a separate bowl, combine green banana flour, coconut, cocoa, cinnamon, and baking powder.
  4. Add the dry ingredients to the wet mixture and knead until you get a smooth dough.
  5. Take small pieces of dough, roll them into balls, and place them on a baking tray. You can press them with the back of a spoon to shape them.
  6. Add chocolate chips on top of the cookies.
  7. Bake in a preheated 170°C oven for about 12-15 minutes.

Once the cookies have cooled, you can serve them.
