Gluten Free Peanut Butter Banana Bread

Ingredients:
- 2 eggs
- 1/4 cup peanut butter
- 1/4 cup apple juice concentrate
- 1/4 cup banana flour (30 g)
- 1/2 packet baking powder
- 1/4 cup chocolate chips
1 cup = 250 ml
Instructions:
- Separate the egg whites and beat them until foamy, then set aside.
- In a mixing bowl, beat the two egg yolks. Gradually add the peanut butter and apple juice concentrate, mixing well.
- Add the banana flour and baking powder, stirring gently without whisking.
- Fold in the beaten egg whites carefully, maintaining the fluffy texture.
- Pour the batter into a greased loaf pan and sprinkle the chocolate chips on top.
- Bake in a preheated oven at 180°C (350°F) for 20-25 minutes.
