Gluten Free Peanut Butter Banana Bread

Ingredients:

  • 2 eggs
  • 1/4 cup peanut butter
  • 1/4 cup apple juice concentrate
  • 1/4 cup banana flour (30 g)
  • 1/2 packet baking powder
  • 1/4 cup chocolate chips

1 cup = 250 ml

Instructions:

  1. Separate the egg whites and beat them until foamy, then set aside.
  2. In a mixing bowl, beat the two egg yolks. Gradually add the peanut butter and apple juice concentrate, mixing well.
  3. Add the banana flour and baking powder, stirring gently without whisking.
  4. Fold in the beaten egg whites carefully, maintaining the fluffy texture.
  5. Pour the batter into a greased loaf pan and sprinkle the chocolate chips on top.
  6. Bake in a preheated oven at 180°C (350°F) for 20-25 minutes.
