Gluten Free Cinnamon Apple Cake

Ingredients:
- 2 eggs
- 1/4 cup vegetable oil (60 ml)
- 1/4 cup dried mulberry powder / preferred sweetener (60 ml)
- 1/4 cup Saledo green banana flour (30 g)
- 1/2 teaspoon baking powder
- 1/4 teaspoon cinnamon
- 2 apples + (1/4 teaspoon cinnamon)
1 cup = 250 ml
Instructions:
- Preheat your oven to 175°C (347°F).
- Dice the apples into small cubes and cook them in a pan with 1/4 teaspoon of cinnamon until they soften. Set aside to cool.
- Beat the eggs with a mixer until foamy. Gradually add the vegetable oil and continue mixing.
- Add the dried mulberry powder (or preferred sweetener) and mix again.
- Gently fold in the Saledo green banana flour, cinnamon, and baking powder using a spatula until well combined.
- Pour half of the batter into a baking mold and evenly distribute half of the cooked apples on top.
- Pour the remaining batter over the apples and add the rest of the apples on top.
- Bake in the preheated oven at 175°C (347°F) for 15-20 minutes. Use a toothpick to check if it's done.
- Once the top is lightly golden, remove the cake from the oven and let it cool before serving.
