Gluten Free Cinnamon Apple Cake

Ingredients:

  • 2 eggs
  • 1/4 cup vegetable oil (60 ml)
  • 1/4 cup dried mulberry powder / preferred sweetener (60 ml)
  • 1/4 cup Saledo green banana flour (30 g)
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon cinnamon
  • 2 apples + (1/4 teaspoon cinnamon)

1 cup = 250 ml


Instructions:

  1. Preheat your oven to 175°C (347°F).
  2. Dice the apples into small cubes and cook them in a pan with 1/4 teaspoon of cinnamon until they soften. Set aside to cool.
  3. Beat the eggs with a mixer until foamy. Gradually add the vegetable oil and continue mixing.
  4. Add the dried mulberry powder (or preferred sweetener) and mix again.
  5. Gently fold in the Saledo green banana flour, cinnamon, and baking powder using a spatula until well combined.
  6. Pour half of the batter into a baking mold and evenly distribute half of the cooked apples on top.
  7. Pour the remaining batter over the apples and add the rest of the apples on top.
  8. Bake in the preheated oven at 175°C (347°F) for 15-20 minutes. Use a toothpick to check if it's done.
  9. Once the top is lightly golden, remove the cake from the oven and let it cool before serving.
