Gluten Free Muffin Recipe
Ingredients:
3 eggs
2.5 tablespoons green banana flour
60 gr white cheese (chopped into small cubes)
2 tablespoons pumpkin and sunflower seeds
5 olives (chopped into small pieces)
2 tablespoons olive oil
1 teaspoon baking powder
A pinch of salt black cumin for topping
Preparation:
Preheat the oven to 180°C (upper and lower settings).
Put the eggs in a bowl and beat well. Add the olive oil and mix.
Add the green banana flour, baking powder and salt and mix until a smooth consistency is achieved.
Add the white cheese, olives, pumpkin and sunflower seeds and mix into the mixture with a spatula.
Lightly grease the muffin cups and divide the dough evenly. Sprinkle black cumin on top.
Bake in the preheated oven for 20-25 minutes until golden brown. You can remove from the molds and serve after it cools down.
