Gluten Free Muffin Recipe

Ingredients:


  • 3 eggs
  • 2.5 tablespoons green banana flour
  • 60 gr white cheese (chopped into small cubes)
  • 2 tablespoons pumpkin and sunflower seeds
  • 5 olives (chopped into small pieces)
  • 2 tablespoons olive oil
  • 1 teaspoon baking powder
  • A pinch of salt black cumin for topping

Preparation:


  • Preheat the oven to 180°C (upper and lower settings).
  • Put the eggs in a bowl and beat well. Add the olive oil and mix.
  • Add the green banana flour, baking powder and salt and mix until a smooth consistency is achieved.
  • Add the white cheese, olives, pumpkin and sunflower seeds and mix into the mixture with a spatula.
  • Lightly grease the muffin cups and divide the dough evenly. Sprinkle black cumin on top.
  • Bake in the preheated oven for 20-25 minutes until golden brown. You can remove from the molds and serve after it cools down.
