Start preheating the oven to 175°C and grease the cake tin.
In a bowl, whisk the egg, olive oil and apple juice concentrate until smooth. In a separate bowl, mix the Saledo Green Banana Flour, baking powder and cinnamon.
Slowly add the dry ingredients to the liquid mixture and mix until a homogeneous consistency is achieved.
Pour your mixture into the cake tin.
Bake in the preheated oven for 25-30 minutes, until a toothpick inserted in the middle comes out clean.
Let your cake cool and serve.
Note: If you don't have apple juice concentrate, you can make it with sweet flours like mulberry flour or date flour. In this case, you can add water until you get the consistency of cake batter.
